A few months ago wrote about living with Arthritis and my eating restrictions. I always envy those that are able to quickly grab a cheese sandwich for lunch or buy a prepared salad. Unfortunately most store-bought salads have added vinegar and I have to avoid bread as well as cheese..
I opened the fridge the other day and groaned. There was half a red onion, half an avocado, one capsicum, a few florets of broccoli and half a cucumber! I always have quinoa in the pantry as well as garlic and ginger on the bench-top, so I decided to use it all!
I put the quinoa (about 2 cups) in a pot, covered it with water to boil gently while I chopped the red onion, ginger, garlic and capsicum very finely and gently softened it in some coconut oil in the pan over a low heat.
After softening these vegetables, I added the broccoli for a short while so that it remained crunchy.
I then chopped fresh herbs from the garden with the remaining half a cucumber
I then drained the quinoa into a sieve, running hot water through it and added it to the softened vegetables in the pan. After mixing it all together, I added the chopped herbs and cucumber, freshly squeezed lemon and olive oil, salt and cracked pepper.
After plating, I added the sliced avocado. It was such a delicious lunch and took only 20 minutes.. Fortunately, Mr R-I also enjoys quinoa ..
